Easy Yellow Spanish Rice
If you ever look on the back of the box of “Spanish Yellow Rice”, even if its that famous company you can find in every supermarket, you will be surprised at how much artificial garbage goes into something so simple. Forget the high level of salt, there is just so much junk in there you don’t need, even if you don’t know what it is because its something you never heard of.
This is a great side dish for nearly anything. It is bright, colorful, flavorful and works well with fish, pork, vegetarian dishes, even those dishes which are not Spanish. The best part is it is fine for leftovers to accompany another side dish the next night. It is the simplest recipe ever and you can do it in a simple $20 rice cooker.
If you want to make this a vegan or vegetarian dish, simply replace the chicken broth with vegetable broth or even water and be sure to add more seasoning to make up for it, salt works, but not a lot, keep it healthy.
- 1 Cup White Long Grain Rice
- 2 Cups Chicken Broth
- 3 Tablespoons Chopped carrots, celery, onion
- 3 Tablespoons frozen baby peas
- 3 Cloves Garlic
- 1/2 Teaspoon Tumeric
- 2 Tablespoons butter
