Olives are one of the oldest foods known to the world.  Fossils of olives exist from tens of millions of years ago.  As far back as we can trace civilization (about 7,000 years) proof exists of the cultivation of olives including The Bible in both the Old and New Testaments.

In the days of Ancient Rome, cutting down an olive tree was punishable by death, and for good reason. From olive trees not only were there olives as food, but olive oil for cooking, but the lesser quality and even oil for lubrication and other industrial purposes.

Today olives come in many types, sizes, colors.  Hundreds of them.  Above is just a small cross view of how many different types of olives there are.  Green, black, red, purple, small, large, with pits, without, vinegar cured or olive cured.  They come from many countries, and they all taste different.  But they are all wonderful.
