Lobster Roll

The Lobster Roll has made its way down from Maine to New York City.  There are now food trucks and many menus that carry this delicious alternative to any seafood salad sandwich or even a whole cooked lobster.

  • 1 lb Cooked Lobster, or 4 ounces of lobster meat per roll
  • Hot Dog Buns
  • 1 ounce chopped celery
  • 1/2 ounce diced onion
  • 1/4 ounce fresh chopped Parsley
  • 1/4 ounce Fresh Lemon Juice
  • 1 tablespoon Mayonnaise
  • 1 ounce or 1 tablespoon Butter
  • Salt & Pepper to taste

Once the lobster is cooked and cooled, crack it open and remove all the lobster meat and put into a mixing bowl.  If you are unsure about how long to boil and cook lobster, the supermarket where you bought it from will be happy to steam it free of charge.  Remember that a 1-1.25lb lobster will yield about half that, and you want about 4 ounces of cooked lobster meat per roll.

Slice the meat into small medallions.  You do not want to chop or mush it. You want small tender chunks of lobster.  Mix the lobster meat together well with all the ingredients except the butter.

Toast a hot dog bun on both sides and brush with melted butter. Add the lobster meat mix and serve.  I personally like dark russet potato chips with this.  You can also drizzle extra butter over the lobster meat for even a more guilty treat.
