Grenadine Syrup

Grenadine Syrup is Pomegranate syrup.  The stuff you get in a bottle in the supermarket has about as much real pomegranate syrup as chicken broth from a can, basically none, and you will pay about $7 for a few ounces of it.

This is the recipe to follow, it should cost you half as much and produce 3 times as much.


  • 1 cup or 250ml of 100% Pomegranate juice with no sugar added
  • 1 cup or 250ml sugar, I like demerara sugar like Maui raw or Sugar in the Raw
  • 5ml fresh lemon juice (about one lemon wedge)
  • 5ml high proof spirit (overproof rum, bourbon, brandy or even vodka, I like to keep it as neutral a spirit as I can so it mixes well in cocktails.  For example, if your main purpose for grenadine is tiki drinks, make it a light rum or even apple brandy).

Bring juice to a simmer, but not a rolling boil.  Add in sugar, continue to stir until dissolved. Add a squeeze of lemon and teaspoon of high proof spirits, put in a clean bottle and store in the fridge for a month or two.
