Clove Syrup is ideal as a secret ingredient to your Tiki and Polynesian drinks as a sweetener, but it is great in hot tea of any kind, but also Hot Rum Toddy, hot apple cider, even with cocktails that call for Applejack, calvados, or apple brandy.
CLOVE SYRUP RECIPE
- 2/3 Cup (5 ounces or 150ml) Demerara Sugar
- 1 Ounce of whole Cloves (about a shot glass or heaping tablespoon)
- 2/3 (5 ounces or 150ml) boiling spring water
Bring fresh cold spring water up to a boil. Add in the sugar and stir until completely dissolved. Add in cloves and simmer for 15-20 mins and allow to sit and additional 10 minutes or so (obviously he longer it sits the stronger the flavor becomes, I like it stronger). Strain into a cup you can pour from. Transfer to a bottle. Add 5ml or teaspoon of high proof spirits such as vodka or rum if you plan to store it for more than a month in the fridge.
While this simple syrup is essential in modern Tiki drinks like Tormenta Tropical, you can also use it for non-alcoholic purposes like black teas or any tea of your choice.
